We have developed a smooth, shelf stable maple cream with Cornell University. Our maple cream provides a smooth spread to use on fresh whole wheat toast or buttery crackers or as a delicious dessert topping for fresh fruit or cakes.  Often a sell out every week at our farmers markets, our maple cream is our best seller and will last 4 months un-refrigerated.  Try it tomorrow on a fresh warm glazed peach or as an icing on carrot cake.

Maple Herb and Garlic Vinaigrette and Marinade

Maple Herb & Garlic Vinaigrette & Marinade

We have a small garden where we grow many herbs and garlic. We do not use any pesticides on our food and follow a naturally grown philosophy. In July we harvest our first cutting of herbs and place them in a base of apple cider vinegar.

 

The herbs are stirred every day for about a month and then the garlic is added in August for a week. The vinegar is strained, filtered and mixed with the maple syrup and canola oil, heated and then packaged according to safety regulations in a certified kitchen, Canadice Kitchens.

 

This sweet vinaigrette or marinade with a hint of garlic, tarragon, lemon basil and chives and of course maple is good on poultry, fish or any steamed vegetable or salads.

Maple Lemon-Lime Basil Vinaigrette for dressing, marinade & grilling

In our small garden we grow seasonal fresh vegetables, herbs and flowers. One of our best growing herbs in our soils is lemon and lime basil.

 

We process the basil in July and place it in apple cider vinegar. After a month, the basil is strained out and the flavored vinegar is heated with maple and canola oil with a touch of lemon zest and packaged according to safety regulations in a certified kitchen at Canadice Kitchens.

 

Many of our farmers market customers use it on fresh salad greens, green beans or cherry tomatoes. We have had many repeat customers use our vinaigrette as a marinade for grilled salmon , other types of fish such as grouper and poultry products.
